Doubt it: Listeria is relatively rare. A healthy 23 year old with no major medical problems is not a high risk of getting a listeria infection. People with immunocompromised conditions such as HIV and on immunosuppressives are higher risk. Cheddar cheese left out for a few hours shouldn't be a problem. Need more info: It is unlikely that melted cheddar cheese made it through your intestine unchanged. However, cheese does lead to constipation in a large number of people which can cause abdominal pain. No: A little mold on your pasteurized cheddar cheese will not cause listeria. Listeria comes from cheese that is UNpasteurized, and typically all of the cheese that you find in your grocery store is going to be pasteurized. Farmers markets and small health food stores tend to sell more unpasteurized cheeses. Having said that, cheese always has label that says it's pasteurized so you can check! ...Read more

Cheese: The difference may be in the formulation of the cheese. Cheddar to give its texture and consistency uses lactate which can cause stomach bloating pain gas etc. Mozzarella and other cheese doesn't. Perhaps try lactaid pill (contains lactase the enzyme that beaks lactate down) prior ingesting your next slice of cheddar. Hope this helps. ...Read more
