Starch is a sugar (carbohydrate) consisting of a large number of glucose units joined together. Gluten free is not the same as starch free for example tapioca flour is gluten free but it is a starch. Completely opposite: The TSH is the most sensitive and reliable indicator of your thyroid function (unless you have a pituitary problem). The other thyroid levels are less reliable and only helpful in people with know thyroid disorders.
