USDA: There are many resources but looking for the usda nutrient tables is a very broad base and those sites will be a start. There are other sites that maintain nutrient values for different foods. You will find some differences, depending on the source.

Supplements: I do think that such supplements are a good idea to enrich a diet that lacks adequate calories. Ask your pharmacist which supplement is best for you. Ensure does have a good track record but others may have less sugar, etc. Take a multivitamin daily as well.
