For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form.

Gargling with salt-water can also help, especially if it feels like there is a lot of mucus in your throat. Itching in the roof of your mouth is a sign of some type of allergy, maybe to something you use right before bed or when you wake up.
Toothpaste or mouth wash?
You might try some otc Claritin (loratadine) to see if this helps. If not then see you pcp and see of you need an allergy test of the allergist consult.

It could be due to a local infection such as bacterial or viral infection, or due to inflammation from allergies or irritants. Postnasal drip coming out sinuses do have an irritant effect.
