Calorie counts: Self-reported calorie counts are notoriously incorrect w/tendency to under count. This has been demonstrated by having someone watch everything you eat for 24hrs. You know you're supposed to record everything & yet you forget (you is generic, not specific you). 500kcal/d is starvation so it's unlikely that's all you're consuming.
