Undigested food particles means that you're not breaking the food down properly, or absorbing nutrients. Have you been worked up for celiac disease, autoimmune conditions, obtained an EGD and colonoscopy with biopsy to assess if it's IBD which includes chron's and ulcerative colitis? Likely: Post inflammatory IBS with symptoms that may last indefinitely which is otherwise poorly understood. It seems that in your case it recurs with heavy fatty loads, overlapping symptoms common in gallbladder dysfunction and pancreatic insufficiency.
