Eggs are among the most nutrient-rich foods, containing all essential amino acids, all B vits., Vit A & D, trace minerals including selenium, iodine and molybdenum and Omega 3 fatty acids.

It is better to have a mixed diet with seasonal fruits and vegetables. Boiled eggs are fine, as long as your cholesterol is normal. Mercury in tuna is a concern, but depends on the source of tuna and it is nor feasible to provide an opinion without testing the contents of the tuna cans.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form.

I went for a brisk walk and after had 3 hard boiled eggs and an apple. Right after my blood sugar was 106. An hour later it was 86. Is this normal?
Probably: 86 is a normal blood sugar. You are on glucophage (metformin) for PCOS which is also used to treat diabetes and thus could be blunting your blood sugar rise after a meal.
