This is only true if your preserving the fibers in the fruit juice if you're taking the fiber component out you lose much of the nutrients in all you're really getting is the water-based contents of the fruit. Gaining weight: That's great that you are not consuming a lot of carbs and are watching your diet. You also need to look at the overall quantity (and calories) of what you are eating as well. Are you exercising too? Without physical activity (cardio), it is hard to lose weight. You have to burn more calories than you are consuming. Low starch diet: I don't know if that is true but you are describing a low-starch diet, and that is generally healthy.
