Fresh but celebrate!: I believe in fresh fruits&veggies/shopping in the periphery of the store. However, if you have a family recipe or something that you use once per year and it's canned pie mix, go for it! Generally speaking - fresh/single ingredients are better than mixtures/processed foods since you know more about what you're mixing with the single ingredients. Salmonella: These germs can survive for weeks on surfaces if you read the text books. From what you describe however, there was no evidence that the raw chicken had Salmonella to begin with, and the nature of the contact seems sketchy as well. About 2-3 days: You can sometimes go up to 5 days. Dry foods and foods high in sugar, vinegar, or alcohol can last much longer. The colder your fridge is set, the longer food will last. If you want to extend the time more, you can also try vacuum sealing the food, then put it in the fridge, that should give you an extra couple of days also.
