Possible Anxiety...: There are a multitude of possible reasons for these symptoms. From simple anxiety and stress to a host of endocrinological (glandular is an old term) or metabolic changes. I would stop caffeinated beverages (coffee, soft drinks/sodas, etc.) and probably see your Pediatrician or Primary Care Physician. The vacations may or may not help support anxiety as a reason, but not necessarily.

Water: How much do they drink without your pushing? How concentrated is the urine? 32 oz is a great goal, but there is going to be some day to day variability based on activity level, other sources of fluid intake etc. Ask yourself, is this really the battle you want to have with them right now? Teenagers have a tendency to push back when they feel like control is being taken away. Choose your battles.
