You can have a disorder where you do not make the proper digestive enzymes to break down fat so it can be absorbed. Floating stools that smell bad enough to clear a room are a symptom. Your dr can do some tests to explore this issue.

This is the norm: Grains are really hard on a person's gut but for most of us our gut gets used to it. However, when you stop eating grains for a time and then add them back you are asking your gut to adjust too quickly to eating grains. Your experience is the norm rather than the exception. Were you to keep eating grains things would eventually improve though they will never feel as good as not eating them.
