Fiber?: White rice and farina(the white bread of hot cereals) have no fiber to speak of. Brown rice has a bit more. Whole wheat cereal, e.g. Wheaten a, whole oats, e.g. Oatmeal, oat bran have more fiber. Can't have a decent stool without adequate fiber. In general, aim for 25-35gm/day. Yes: White rice has a high glycemic index, which means it causes a rapid rise in your blood sugar. Part of the Insulin response to that rapid increase in blood sugar makes you fat. A tiny amount won't hurt, but it makes it difficult to lose weight. Replace the bread with vegetables. Not rice. Starch is not a required part of a meal. Does not matter: Since 90% of the cholesterol is produced by the body regardless of your diet, the above would not noticeably affect your cholesterol level. Do note that too much carb may not be good for your health. I don't believe extreme diet does anyone any good. Don't have the rest: of your history to know for sure if it's good. As long as you're not allergic to blueberries, wheat, or peanuts (common allergies that can manifest subclinically). Also as long as it's not GMO wheat, peanuts. Hard to say: First, how long after eating are you checking your sugar? You should be waiting at least 2 hours to get reproducible valid results. If you are 270 2hr pp, that of course, is too high, and just switching from a simple carb (white flour) to a more complex carb (soy) will probably not get it into the target range of <150.
