Better than white: Rice -whether it is white or brown is a carbohydrate and should be eaten in a limited amount when you have dm. Brown rice is a better choice because it is higher in fiiber and tends to have better effect on blood sugars. Not likely: You want 5 servings of veggies daily. It is unlikely that you can get that amount in just one veggie shake. If you are making it on your own, are you putting in 5 different veggies in the correct portions? It's not too bad ...: I think there is a way to make "living off Subway" pretty healthy. If you get wheat bread, low fat meat (turkey), mostly avoid cheese, get "lots of veggies" and little or no dressing or mayo, it is pretty healthy.
