In general, slow transitions work best. Gained weight comes from consuming more calories than you burn. Some people burn more calories than others at a baseline (normal activity), others gain weight very easily - this baseline of calories burned will slowly decrease through almost everyone's lifetime.
As you increase your calories, monitor your weight and note the time you commit to exercise each day or week. If you start gaining, either increase your exercise intensity or eat healthier foods with less fat and sugar. Not all exercise is equal, shorter durations of high intensity exercise is much better than a leisurely walk or sitting on a stationary bike and reading a book, however any degree of exercise is better than nothing.
