First you need to be congratulated on your amazing accomplishment. My first bit of advise is that you should definitely meet with a nutritionist to come up with a workable long term plan. Eating 1 meal a day sets you up for weight regain, because your metabolic rate has likely been turned down greatly. As far as your attempts at "spot" training in the gym with goals of weight loss in one specific area of your body, this simply is a myth that doesn't work. Don't be discouraged, no human body is able to lose weight in one specific area. This is usually an "all or none" phenomenon. As you lose fat, it will disappear everywhere, but at genetically predetermined rate. This is why for some people the issue I love handles vs. Thighs vs. Belly fat.

Not healthy: Too few calories- In general the amount of calories you are suggesting would be too low to sustain a weight loss over time. Your body may go into starvation mode and decrease its metabolism cause its not getting enough calories.
