Not healthy: Too few calories- In general the amount of calories you are suggesting would be too low to sustain a weight loss over time. Your body may go into starvation mode and decrease its metabolism cause its not getting enough calories. Possible: I recommend you do this under the supervision of your physician to monitor your electrolytes and adjust your diabetes medications as you start losing weight. Remember the best diet is one you can maintain for life so unless there is a medical reason to do something this drastic, i think you should talk to your doctor and come up with a sustainable plan.
