Achilles stretch : The wall stretch (stretches calf), staircase stretch, runners stretch, towel around the foot and straighten knees slowly, there are many others but difficult to explain without first hand demonstration. I hope this helps though.

No Jumping/Hiking: More important question is what activities you should not do. You should not do any jumping, hiking, walking up or down hills/slopes, running, or in general anything that causes pain in the back of your heel when you participate :).

No : Once growth plates have fused, usually around 17 or so in boys, growth is done. Stretching the legs to add more height can be accomplished with breaking the long bones in the legs and then resetting them. I've only seen this done in patients with achondroplastric dwarfism. Just stretching the leg muscles will not add height.
