They aren't: Vegetarians exert a lot of influence in the usa, and government publications about "iron-rich foods" include stuff like spinach, which is loaded with iron that you can't absorb or use. Your best source of iron if you do not supplement is meat and liver. If you are found to be iron-deficient, your physician will try to determine why so as not to miss serious disease causing blood loss.
