i'm just wondering, if you are diabetic, how long does it take food to affect your glucose levels?

One hour: Whether you are diabetic or not, food containing carbohydrate will raise your blood sugar within an hour and may go on raising it as long as carbohydrate remains in the stomach. If your Insulin output or dose is correct, the blood sugar will go down during the second hour and may go lower than it was before you ate.
