R/O IBS: IBS = irritable bowel syndrome is a diagnosis of exclusion. You need a full exam and blood work. Especial screen for H pylori . Also stool screen x 3 for occult blood /parasite/hpylori . Given age over 50 you also need a baseline colonoscopy. While you are getting these items checked out you should ditch to a gluten free high fiber diet . Ie gutbliss.com and Wholeapproach.com. Also 64-80oz water

Not irritable bowel: Reflux isn't IBS, gastitis is inflammation of the stomach. Foul-smelling stools sometimes mean gastroenteritis or malabsorption. Sounds like it is time for a GI specialist or at least a visit to your usual physician for stool studies if the problem continues and even a gluten sensitivity panel with a later GI referral. irritable bowel synd is a diagnosis of exclusion, although real and painful.
