why are the blood vessels in my hands sometimes big/bulging and other times harder to see? other than hydration status what causes changes in size?

Bulging vessels: U described a phenomenon that is entirely within the normal range, smooth muscle encircling the vessel wall under automatic nervous and chemical control will contract and relax causing the changes that youl observe.
