I've always sat with legs crossed or one foot resting on my leg. can poses like those cause an adult to increase height like i hear yoga can do?

No : Yoga doesn't increase your "height" so to speak, as in increase the anatomic length of your spine, but rather can improve your posture. So while you may measure "taller" it's related to your spinal alignment being "optimized" rather than true anatomic elongation of your spine.
