Many: Sedation ( MAC) you are awake but calm, likely no memory of the surgery pain relievers given
unconscious sedation: like above but you fall asleep
Spinal: injection into lower back can't feel pain or move legs from 1-6hrs depending on drug
Epidurual: very similar to spinal
General: fully unconscious very deep no recollection or pain

Anesthesia: There are a multitude of anesthesia techniques available for general anesthesia (state of unconsciousness), regional anesthesia (nerve blocks) as well as conscious sedition, moderate sedation, and deep sedation. It would depend on what procedure you are having performed as to what the best anesthetic options are.
